vegan and gluten free banana bread
This recipe is by far one of my best experiments in the kitchen. It´s easy to make, healthy (kind of), very filling and it takes literally 5 minutes to prepare.
So, if you are felling kind of lazy today, but craving something sweet, this is the one to go for.

- 3 bananas (1/4 of banana for decoration)
- 2 cups gluten free oats (or normal oats)
- 1/4 cup maple syrup (or any other liquid sweetener)
- 2 chia eggs
- 1/2 cup almonds or any nut of your choice
- 1,5 tsp cinnamon powder
- 2 tsp baking powder
Preheat the oven to 200º.
In a bowl add 2 tbsp of chia with 6 tbsp of water and let it sit for at least 5 min.
Place the oats in a blender or food processor until you reach a flour consistency. Add the remaining ingredients, including the chia eggs. Blend once again, enough to mix everything, avoid turn the almonds into flour, you should have chunks.
Add coconut oil and flour to a loaf pan, add the mixture and let it cook, at 200º, for at least 35 min.
As you can see the consistency is kind of yet inside, and the almonds are not completely crushed, which makes it so yummy.
Warning: this banana bread is best served with some homemade compote or butter.
