beetroot burgers with almond pesto

I must confess Im not a huge fan of beetroot, unless the earthy flavour is covered, which is the case of these beetroot burgers with almond pesto.

On the other hand, I´m a huge fan of pesto, so I guess this is the perfect combination, plus these burgers are easy to prepare, delicious, and super versatile. You can eat them in a bun, with a salad, or with some quinoa/rice/potatoes, you name it.

So if you are like me, not a really beet friend,  be ready to change your mind forever


beetroot burgers with almond pesto

  • To prepare the burguers
  • 2 tbsp powdered flaxseeds
  • 5 tbsp water
  • 3 boiled beetroots- 500 gr
  • 1 onion small- 130 gr
  • 2 garlic cloves
  • 1 tbsp tahini
  • 3 tbsp nutritional yeast
  • juice 1/4 lemon
  • 1/2 cup coconut flour (but I guess it can go well with any other flour like buckwheat, quinoa, rice, corn)
  • 1,5 cups gluten free oats (or tradicional oats)
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp paprika
  • To prepare the pesto
  • 30 gr basil
  • 1/2 cup almonds (around 80 gr)
  • 1 tbsp olive oil
  • 1/4 cup water
  • juice 1/4 of lemon
  • pinch of salt
  • pinch of pepper


Start by boiling the beetroots. This should take around 15 min.  In a bowl mix the milled flaxseeds with water. Let ir rest for 5 minutes, until you reach a paste consistency.

Grate the beetroot and add it to a food processor or blender. Add the remaining ingredients, including the flaxseed “egg”. If necessary, add more flour, until you reach a consistency where, using your own hands, or two spoons, you can make the burgers.

In a pan, add a bit of olive oil or coconut oil, and when the pan is hot, add the burgers. Let is cook for about 15 min, flipping over the sides half away through. You will know when the  burgers are cooked, once the sides are dry.

To prepare the pesto:
Add all the ingredients to a blender or food processor. Adjust seasonings if needed.


Look at this pesto, so yuuuuum!
